February 09, 2018 Recipe Mash-Up: Falafel meets Waffle

A flax-rich falafel meets a waffle iron and the result is a tasty, better-for-you dish minus the deep frying. This recipe is full of healthy ingredients such as chickpeas, hummus, canola oil and each serving contains 2 Tbsp (30 mL) of ground flaxseed!  #2TbspFlax

 

Step 1: Start by preheating your Belgian waffle maker according to the manufacturer’s instructions. It is best to make one waffle at a time in the center of the waffle iron so, you will also need to preheat your oven to 200 F (93 C) to keep the waffles warm until ready to serve. Place them on a wire rack on a baking sheet so the bottoms don’t get soggy.

Step 2: Add chickpeas, hummus, herbs, red onion, garlic, lemon zest and juice, and canola oil to the container of a food processor fitted with the S blade. Process for 1-2 minutes until paste-like.  Note: Use your favorite hummus or experiment with different flavors until you find the one you like best. 

Step 3: Next add the ground flaxseed, spices and salt. Process just until combined. At this point, the mixture can be transferred to an airtight container and refrigerated for up to 3 days, or waffles can be made immediately.

Step 4: Brush your preheated waffle maker with canola oil (be liberal).

Step 5: Then add a heaping 2/3 cup (150 mL) of batter to the middle of the waffle iron, spreading the batter out a little. Gently lower the lid and let cook for 8 minutes. Note:  Don’t flatten the waffle or close the lid completely as you want a nice, thick waffle.  After 8 minutes, check the waffle – if it’s starting to brown but feels soft, give it a couple minutes more. If it’s crisp, gently take it off with a fork or spatula and put it in the oven on a wire rack to keep warm. Repeat with remaining waffle mixture.
